RecipeSummer Strawberry Jam
1. Ingredients
1. Sugar 1.5 cup
2. Water 0.5 cup
3. Fresh lemon juice 1.0 tbsp
4. Strawberries 8.0 cup
2. Method
1. Bring the first 3 ingredients to boil in a large saucepan over medium-high heat, stirring until sugar dissolves and brushing down sides of pan with a wet pastry brush.
2. Attach a candy thermometer to the sides of the pan and boil syrup until the thermometer registers 225°F, about 6 minutes.
3. Mix in strawberries. Return mixture to boil, reduce heat, and simmer until jam thickens and thermometer registers 216°F, stirring occasionally for about 1 hour.
4. Transfer jam to a small bowl and cool.
5. Cover and refrigerate.
